You're a hilarious writer, love your voice. :) I was put on a similar diet when I was diagnosed with ulcerative colitis in high school...I remember bananas were okay, so I tried my best to mash them into yummy desserts. I also cooked skinless fruits, which sounds super icky written that way but can also mean a pear poached in red wine, which I still love. I was also in high school, so plain pasta or with just a bit of parmesan and butter was most welcome anyway... If you want to make a low-fiber recipe blog I'd totally read it ! haha
